Trefloyne Seared Tuna Salad

Ingredients - Dressing


  1. Mix dressing ingredients and set aside.
  2. Slice the red and yellow peppers and roast at 190°C with a drizzle of olive oil.
  3. While the peppers cook boil eggs in salted water for 3 minutes, before adding green beans and boiling for a further 2½ mins - then drain.
  4. Put a griddle pan on to heat.
  5. Combine the peppers, green beans, rocket and coriander with the dressing and put on plates.
  6. Shell and halve/quarter the eggs and arrange on plates.
  7. Rub the tuna with a little olive oil, salt, pepper and a little cumin before searing on both sides and transferring to salad plates.
